It is with a heavy heart that Phil and I have decided the store will be closing. Our last day open will be March 31st, 2024.
It truly hurts our hearts to do this as we have grown so close to so many of our valued customers. It has been our pleasure to work with all of you and this decision was not made lightly.
We will still be selling custom quarters/halves & whole beef but our store intown will be closed which means no more individual cuts, bundles and Saturday store hours.
Now the answer to the question you all want... why close?
We assure you, again, this was not an easy decision. Phil and I are looking at a big move in the near future to the family farm which will leave us without a town location. We are also taking a huge step into the cattle industry and are going to be growing by contract. With the hog buildings, new cattle buildings to come in the spring and row crop farming we are trying to save the rest of the little time we have for our family.

Found in the hind quarter, this cut of meat is the bottom part of the well know T-Bone. It is very tender and a great on the grill or even the George Foreman.
Located in the hind quarter, this tender piece of meat is the top part of the well know T-Bone. It is the most tender part of the whole beef. Grill it or bake it!
The Chuck Roast is found in the front quarter. It can come bone in or boneless, but you'll get the best taste with the bone in. You can cook the Chuck Roast in the oven or in a slow cooker.
Rump Roast is a cut of beef from the bottom round, the rear leg of the cow and can be used for a lean meat for a roast in a crock pot.
Brisket is a very good piece of meat found in the front quarter. You will get it with the fat on, to keep it moist, when you smoke it for 8-10 hours for a great TASTE!
Lots of uses for 89% lean ground beef. Our ground beef comes from all parts of the beef. In fact itll be 89% and UP!

The beef liver come from the chest cavity of the beef around the stomach area. You know you want to make some liver and onions!
Beefy with a slightly gamey flavor you can use this internal organ to grill or look for recipes coming soon to roamingribeye.com and learn how to dredge it in flour and saute it.
Our beef tongue usually is in the range of 10-12 inches long and you can use it in the crock pot, its great with BBQ beef... you'll LOVE IT!
This very tender of meat is found in the front quarter. Cook it on the grill or prepare it as a favorite of many, prime rib.
This is the filet mignon and new york strip and it is found in the hind quarter. This cut of meat is great on the grill.
Found in the hind quarter this cut of meat is not as tender as the ribeye or tbone but it is still a very good piece of meat. Prepare this one on the grill.
Found in the hind quarter near the rump. You will want to grill your sirloin tip really slow or use it in a roast.
This cut of meat is found in the front quarter. Not as much beef here as the chuck roast but still tender when cooked in the oven or crock pot.
Short Ribs are found in the front quarter. More beef with these ribs than texas style ribs. Great flavor when cooked in a crockpot.
Soup bone would be found in the front quarter. Front leg, with meat from1 3/4" to 2". Great in soups or a general beef broth.
